Biltong & Cheese Drenched Sweet Potato Fries recipe is one of those things that started as a side dish and ended up being the whole meal. Sweet potato fries layered twice — cheese, biltong, more fries, more cheese, more biltong — then back in the oven for a few minutes. The pepper jack melts into everything and the biltong adds that salty, chewy bite you don't get from regular loaded fries. We like Alexia for the fries but any brand works.
Ingredients:
- 15-20 oz of sweet potato fries I like Alexia
- 1 cup of chopped biltong
- 3 oz pepper jack cheese
- salt
Instructions:

Bake the sweet potato fries according to the package until crispy.

Spread half of the fries over the plate that is oven safe. Lightly salt.

Grate half of the cheese over the fries and sprinkle with half of the biltong.

Spread the remaining half of fries over the top.

Grate the remaining cheese, evenly, over fries and sprinkle with remaining biltong. Add a little more salt over the top.

Bake for about 3-5 minutes at 400.
Frequently asked questions
Why sweet potato fries instead of regular fries?
Sweet potato holds up better under the cheese and biltong without going soggy. The slight sweetness also works well against the pepper jack and the salty biltong — regular fries can taste flat by comparison. That said, if you only have regular fries around, it still works.
Can I use a different cheese?
Pepper jack is what we use because it melts well and adds a bit of heat. Cheddar is a solid swap if you want something milder. Avoid anything too hard or dry — it won't melt evenly over the fries in 3 to 5 minutes.
Can I make this ahead of time?
Not really. The fries need to go into the oven crispy and come out right before eating — they soften fast once the cheese is on. Best to bake the fries fresh, build the layers, and do the final bake right before serving.
