They have a different texture than traditional jerky, being fluffy rather than tough. There are no added sugars and no nitrates; the ingredients are simply grass-fed beef, sea salt, coriander, vinegar, and Worcestershire powder.

How is Ayoba's Grass-Fed Biltong made, and why does it take so long?
To create its beef jerky, Ayoba bucks all the shortcuts and truly takes its time. In total, it will air-dry its beef anywhere between 7 and 14 days, allowing for maximum tenderness and zero chewiness. First, Ayoba marinates its beef in vinegar and spices and then air-dries it for a slow, long time. Many commercial snack alternatives (such as Jack Links) completely skip the marinade window. Ayoba will not.
