Grated Ayoba Biltong Mashed Potatoes

An American favorite with a South African twist. Our Biltong Mashed Potatoes are smooth and creamy with a protein kick. Itβs the perfect side dish.
Ingredients:

10 white potatoes

4 gloves of garlic
-
1 cup of unsalted butter (2 sticks)

1 cup of heavy cream
-
1/4 cup of milk
-
5 tablespoons of sour cream
-
Salt and Pepper
-
2 cups of shredded Fontina cheese
-
1/2 cup of Biltong, grated in a food blender

Chopped chives for garnish
Instructions:

Peel and dice your potatoes into 1 inch cubes.

Place your potato cubes and minced garlic into a tall cooking pot. Fill with water until the potatoes are covered. Add 1 tablespoon of salt to the water and bring the water to boil. Once boiling, lower the heat and simmer for 15-20 min.

Let potatoes cook until you can cut the potatoes easily with a butter knife.

Drain the potatoes and immediately mash them. Use a potato masher or a electric mixer, mash until they are completely smooth.

Place the butter, heavy cream and milk into a microwave safe bowl and heat until the butter melts into the milk and heavy cream. Add the butter mixture to your potatoes and mix to incorporate.

Then mix in the cheese and Grated Ayoba Biltong.

Add salt and Pepper to taste.

Add chopped chives if desired for garnish Serve the fluffy mashed potatoes hot.
