
Everything But The Kitchen Sink Egg Salad with Biltong

Ingredients:

1 package of Biltong

2 cups of Spring Mix

3 oz Egg Salad
-
2 tbsp Chopped Fennel
-
1 tsp Scallions
-
1 tsp Cilantro
-
6 Eggs (hardboiled)

2 tbsp of Primal Kitchen Avocado Mayo

1/2 tsp BBQ Seasoning
-
1/2 cup Olive Oil
-
1/2 cup Apple Cider Vinegar

1/2 cup Dijon Mustard

1 tbsp Honey
Instructions:

Perfect Hardboiled Eggs: Fill a medium sized pot with six eggs and add enough cold water for there to be at least 2 inches of water above the eggs. Bring to a boil. After one minute, remove pot from flame and cover for 10 minutes. Remove eggs from hot water and place carefully in ice bath for 5 minutes or until they cool to room temp. Peel eggs and slice.

Choose a large bowl and add spring mix.

Chop veggies and toss in salad.

Scoop egg salad in the center and arrange Biltong on and around.

Add scallion and cilantro, then pour dressing over salad. Enjoy!
